Trying to find just 5 recipes to share is always a challenge. Supper in an Amish home is a reflection of their busy days and lives, but is almost hearty and enough to bring the family together around a table. Some of the recipes below have "short cuts", there is a recipe that calls for a tube of biscuits, but most Amish homemakers would probably just whip up some from scratch.

Occasionally, I will hear from readers who are surprised or dismayed by the amount of "processed" foods in Amish diets, or mainstream foods. But that disappointment is misplaced. The Amish don't live in bubbles, so they are exposed to mainstream food trends. And some of those trends, from Velveeta cheese or cream of chicken soup, have caught on. Amish homemakers are BUSY, so if they can find a way to cut a corner when making a recipe, they, understandably, often will.

None of this means that Amish cooks aren't inventive and creative. They are. But they'll stay within certain parameters.

Anyway, you won't go wrong with any of these super farmhouse suppers!

🍲 Mashed Potato Beef Casserole

  • 2 bacon strips, diced
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 /4 pound fresh mushrooms, sliced
  • 1 large carrot, finely chopped
  • 3 tablespoons flour
  • 1 cup beef broth
  • 1 tablespoon Worchestershire sauce
  • 1 teaspoon salt
  • 1 /4 teaspoon pepper
  • 3 cups hot mashed potatoes
  • 3 /4 cups shredded cheddar cheese, divided

Instructions

  1. Fry bacon in a large skillet until crisp.
  2. Drain, reserving 1 teaspoon of drippings.
  3. Set bacon aside.
  4. Cook beef in drippings until no longer pink.
  5. Drain.
  6. Toss onion, mushrooms, carrots, and celery in flour, add to skillet with broth, Worcestershire sauce, salt, and pepper.
  7. Bring to a boil.
  8. Reduce heat.
  9. Simmer uncovered for 15-20 minutes until vegetables are tender.
  10. Add beef and bacon.
  11. Put into a greased 2-quart baking dish.
  12. Combine potatoes and ½ cup of cheese, spread over beef mixture.
  13. Sprinkle with remaining cheese.
  14. Bake uncovered at 350 for 20-25 minutes or until heated through.
  15. Serves 4-6.

🍕 Pizza Beans

  • 1 pound ground beef, browned
  • 1 small onion, chopped
  • 1 16 ounce can pork and beans, drained
  • 1 teaspoon salt
  • 2 tablespoons brown sugar
  • 3 /4 cup barbecue sauce
  • 1 10 ounce can biscuits
  • 1 1 /2 cup shredded cheddar cheese

📋 Instructions

  1. Combine beef, onions, beans, salt, sugar, and barbecue sauce.
  2. Place in a 9-inch square pan.
  3. Bake uncovered at 350 for 30 minutes.
  4. Uncover and top with biscuits.
  5. Return to oven for 15 minutes or until biscuits are brown.
  6. Top with cheese.

🍲 Old Fashioned Beef Potpie

  • 2 pounds stewing beef
  • 6 cups water
  • 1 ½ teaspoons salt
  • 6 medium size potatoes
  • 2 cups all-purpose flour
  • 1 egg
  • 3 tablespoons milk or water
  • 1 teaspoon minced onion
  • 1 teaspoon minced parsley

📋 Instructions

  1. Cook meat in salt water until it is tender.
  2. Remove meat from broth; add minced onion and
  3. parsley to broth. Bring to the boiling point
  4. and add alternate layers of cubed potatoes and squares of dough.
  5. Add meat and stir through pot pie.
  6. To make dough, beat egg and add milk. Add flour to make a stiff dough. Roll out paper thin and cut into 1-inch squares. Keep broth boiling while adding dough squares in order to keep them from packing together. Cover and cook for 20 minutes, adding more water if needed.

🍗 Mennonite Chicken Dumplings

  • 1 cup of butter
  • 2 cups eggs about 12
  • 4 ½ cups of all purpose flour
  • 1 tbsp. baking powder
  • ¼ tsp. salt
  • 4 sprigs of parsley finely chopped
  • 3 large carrots peeled and sliced
  • 1 cup of green beans cut to preference
  • 2 ½ cups of shredded chicken
  • large pot of chicken broth or stock

📋 Instructions

  1. Preparation:
  2. Beat butter until fluffy
  3. Add eggs slowly
  4. Add dry ingredients and mix until thoroughly blended (don't over-mix it)
  5. Flour your hands and form balls slightly larger than golf balls. lay them on a greased tray
  6. Make broth and boil sliced carrots and green beans until soft
  7. Add parsley and chicken
  8. Bring the soup to a rolling boil and carefully spoon in the dumplings
  9. Put on the lid and cook for 10-15 minutes or until soft and fluffy. Do NOT open the lid!
  10. Do not overcook them or they will fall apart.
