If you do not have a lot of time this holiday season (and who does?) this simple cookie bar is the perfect holiday treat to make for holiday gathering, lunchboxes, school treats, or to bring into the office. Festive, fun, and a snap to make, these Gumdrop Cookie Bars are great for children and adults alike.

Gumdrop Cookie Bar Recipe

These gumdrop cookie bars are the best “cookie” to make when you have zero time for holiday baking. They are soooo easy to make, and ready – from start to finish – in about an hour.

Gumdrop Cookie Bar Notes:

● Look for gumdrops in the bulk food section of your grocery store. They are usually less expensive than bagged gumdrops, and they are available all year!

● Avoid using black grumdrops in this recipe.

● After you spray your pan, you can line with parchment paper (to form a +) if you like. You can then life out the baked gumdrop cookie bars to cut instead of cutting inside the pan.

● You will see a slight cracking at the top of these cookie bars when they are baked, but the inside will still be moist.

Gumdrop Cookie Bar Ingredients:

● 1 cup Flour
● ¼ tsp Salt
● ½ cup Gumdrops, chopped
● ½ cup Almonds, chopped
● 2 Eggs
● 1 cup Sugar
● 1½ tsp Vanilla Extract

Gumdrop Cookie Bar Mise en Place:

Stand Mixer (bowls, beater, etc)
● Sifter
9″x9″ Baking Pan

● Spatula
● Spoon
● Wire Rack

Gumdrop Cookie Bar Directions:

● Grease a 9″x9″x2″ baking pan. Set aside.
● Preheat oven to 325°.
● Sift together 1 cup flour and ¼ teaspoon of salt.
● Fold the ½ cup of chopped gumdrops and ½ cup chopped almonds into the flour mixture, set aside.

● Using a stand mixer, in a mixing bowl, beat 2 eggs until foamy.

● Add 1 cup of sugar and 1½ teaspoon of vanilla extract to the eggs; mix well.

● Remove bowl from mixer, and add the flour mixture to egg mixture, blending together by hand.

● Spoon batter into your greased baking pan, spreading evenly.

● Bake in a preheated 325° oven for 30 to 35 minutes.
● Note: you may see a slight cracking at the top, but the inside will still be moist when baked.

● Remove from oven and allow cookie bars to cool for 10-15 minutes in the pan, on a wire rack.
● Cut the gumdrop cookies into squares inside your pan while still warm.

● Allow gumdrop cookies to cool completely in the pan before removing.
